FAT FREE TACO SALAD _____________________________ FAT FREE TACO SALAD ______________________________ When I mention to people that I’m fat free, their response is usually, “I could never do that.” FYI, my husband had the same response. • But there’s something inside of me that so desires to change that. • I want to show people that there are many meals that can be healing AND delicious AND satisfying even if they don’t have fat, gluten, dairy, eggs, corn, soy, meat or vinegar. • This is one of them! • I shared this salad with my husband and he told me he could totally eat this salad. PARSLEY SHOT ______________________________ Here’s the recipe for the Parsley Shots I’ve been taking. • Nerve-Gut Acid Stabilizer: @medicalmedium Brain Shot Therapy Ingredients: 4-6 cups tightly packed fresh parsley or fresh cilantro* Directions: Run the parsley or cilantro through the juicer. Pour into a glass and serve immediately. *Note: Select either parsley or cilantro (not both at once) to create either a pure parsley or pure cilantro shot. Makes 1-2 shots Tips: Drink this shot 15 to 30 minutes apart from any other food or drink. You can use any variety of parsley for this recipe, flat-leaf Italian or curly parsley. PLANT BASED GROUND MEAT SUBSTITUTE ______________ PLANT BASED GROUND MEAT SUBSTITUTE ______________________________ I used the Lentil Loaf recipe by @medicalmedium as inspiration for this. This is how I made it but I feel like I still may need to tweak it. Ingredients: - 1 cup of green lentils - 3 cups of water - 1/2 cup of gluten free oats Instructions: Cook lentils for about 20 mins. You want them soft but not mushy. (Note: French green lentils need a bit longer cooking time as they are much firmer then green lentils) While the lentils are cooking, blend the oats to make oat flour. Once lentils are cooked, drain them. You want them as dry as possible. In a bowl mash the lentils with any seasoning of your choice, leaving some whole pieces. I find the whole pieces give it good texture. Then slowly mix in the oat flour, making it crumbly versus a big dough. Using a fork helps. Then in a nonstick pan on medium heat, dry sauté it without any oil or liquid. Constantly stir so all sides get firm. Do this until it gets slightly on the drier side. • Again, this needs to be tested more, but I know you’ll want to try this.
